BROILED SHRIMP WITH HERBED GARLIC BUTTER

SERVES 3 to 4

This is quick, easy and delicious. In my family it usually only serves 2 or 3. Serve with rice or noodles to drizzle with the extra butter.

INGREDIENTS

In a broiler-proof skillet large enough to hold the shrimp in one layer, melt the butter with the garlic over medium-low heat for about 5 minutes, or just until it starts to sizzle. Remove from heat. Preheat broiler to high. Place upper rack as close to broiler as possible. Add the shrimp to the pan. Season with salt, pepper and parsley. Stir to coat the shrimp with the melted butter. Broil just until pink on one side, then turn shrimp and broil the other side. Serve immediately, drizzling the garlic butter over the shrimp.
