ST. PATRICK'S DAY MENUS AND RECIPES

I have always found it difficult to find what I can determine to be authentic Irish recipes. From what I have read, the dish we most often associate with St. Patrick's Day, Corned Beef and Cabbage, is actually Irish-American. There is no question that the most popular food is, and always was, the potato. Other root vegetables are used often. Beef and lamb seem to be the predominant meats and salmon is a favorite seafood. The following menus and recipes are great for St. Patrick's Day or any occasion. A few are authentic, some are traditional, whether or not they are actually of Irish origin, and others are used to round out the menus. I included links to salmon recipes, a few miscellaneous side dishes, Irish recipes from visitors, and a link to some ideas for using leftover corned beef and cabbage.
