Traditional Irish cooking is simple, based on what is available. There is no question that the most popular food is, and always was, the potato. Other root vegetables, notably parsnips and turnips, are used often. Lamb and pork seem to be the predominant meats and salmon, along with cod and oysters, favorite seafoods. Dairy products are also plentiful, and Ireland is famous for its butter and cheese. Desserts remain a mystery to me. However, I found reference to apples quite often. In recent years, Irish chefs have introduced the people to a new cuisine using locally harvested products that had been previously overlooked. It is interesting to note that, the dish we most often associate with St. Patrick's Day, Corned Beef and Cabbage, is actually Irish-American. Whereas there is little beef in Ireland, Irish immigrants found it plentiful in America. There is a similar dish in the mother country that uses bacon and cabbage. The following menus and recipes are great for St. Patrick's Day or any occasion. A few are authentic, some are traditional, whether or not they are actually of Irish origin, and others are used to round out the menus. I included links to several salmon, cod and oyster recipes, as well as a few miscellaneous dishes and shared recipes from visitors.
