Broccoli with Garlic and Parmesan Cheese
This is a quick, easy, healthy and delicious recipe for broccoli. Just a little Parmesan cheese adds a lot of flavor. This Italian cooking method, which I use for many vegetables, is a cross between braising and steaming in that there is just enough water added to the olive oil to provide moisture and steam. Serve this side dish for a family meal or, since it travels well and can be served room temperature, at a potluck event.
- 1 bunch broccoli, about 1-1/2 pounds
- 2 tablespoons olive oil
- 2 large garlic cloves, minced
- Salt and pepper to taste
- 3 tablespoons freshly grated Parmesan cheese
Clean the broccoli. Remove the tough stem ends, then cut the remainder into medium florets and small stem pieces. Heat the oil in a large skillet over medium-high heat. Add the garlic and sauté until softened, about 1 minute, being careful not to brown. Add the broccoli, salt, pepper and just enough water to make some moisture in the pan. Cover and cook until tender, about 15 minutes, adding more water if it dries out. When done, remove the lid and cook until the water evaporates. Sprinkle the top with the Parmesan cheese. Let set until the cheese has melted. Serve hot, warm or room temperature.
