ROASTED CAULIFLOWER
SERVES 4 to 6
Cauliflower is yet another vegetable that is delicious when roasted with just a little seasoning and oil. This is a quick, easy and very healthy vegetarian side dish recipe.
INGREDIENTS
- 1 medium head cauliflower, broken into medium-sized florets
- Salt and pepper to taste
- 1 teaspoon dried marjoram leaves
- About 1 tablespoon olive oil
- Freshly grated Parmesan cheese (optional)
Preheat oven to 450° F. Place the cauliflower on a large shallow-sided baking sheet in one layer. Season with the salt, pepper and marjoram. Drizzle all over with the oil. Toss well to combine. Roast until lightly browned and tender, about 30 minutes. If desired, sprinkle with some cheese and roast just until melted, about 2 minutes. Serve hot or room temperature.
