BAKED PARSNIPS

This recipe for parsnips can be found all over the Internet, so I don't know where to give credit. It is obviously a traditional Irish recipe. In any case, it is a very good and simple side dish. Make it with butter for a vegetarian version.
INGREDIENTS
- 2-1/2 pounds parsnips
- Water for cooking, plus 3 tablespoons
- Salt and pepper to taste
- Pinch of nutmeg
- 2 tablespoons butter or bacon fat
Peel the parsnips. Cut into quarters and remove any woody core. Cook in lightly salted water for about 15 minutes or until just tender. Drain; place in an ovenproof baking dish. Add the 3 tablespoons water; sprinkle with salt, pepper and nutmeg. Dot with butter or fat. Bake in a preheated 350° F oven for 30 minutes.
Note: Higher or lower oven temperatures may be used if baking while roasting a meat dish. Adjust the time accordingly.
