BAKED PARSNIPS

This recipe can be found all over the Internet so I don't know where to give the credit. It is obviously a traditional Irish recipe. In any case, it is very good and simple.

INGREDIENTS

Peel the parsnips. Cut into quarters and remove any woody core. Cook in lightly salted water for about 15 minutes or until just tender. Drain; place in an ovenproof baking dish. Add stock; sprinkle with salt, pepper and nutmeg. Dot with butter or fat. Bake in a preheated 350° F oven for 30 minutes. Other oven temperatures may be used if baking while roasting a meat dish.
