SMASHED POTATOES AND ONIONS

When I want mashed potatoes but don't want to go through the extra steps of mashing and mixing them, this is what I have. It is basically a cross between boiled and mashed potatoes. The onion adds lots of flavor, so the butter may be reduced or omitted for a light and healthy version. These also hold up very well if kept over a low heat until needed.

INGREDIENTS

Place the potatoes and onions in a medium saucepan. Add enough water to almost cover. Add salt. Bring to a boil over high heat. Cover, reduce heat to medium-low and simmer until the potatoes are tender when stuck with a fork. Drain off all of the water. Mash slightly with the back of a fork or potato masher. Season with salt and pepper. Add the butter, return to the burner over low heat and allow the butter to melt. Serve immediately or keep warm until use.
