Steamed Spinach with Olive Oil and Garlic

Serves 4 to 6

I love spinach. This is based on my recipe for sautéed fresh spinach, which is in the similar and related recipes links, but I substitute frozen spinach and steam it in the microwave. It is especially convenient when serving more people. Additionally, I can make it at the last minute when I do not have fresh spinach since I always have frozen on hand. It takes a lot of fresh spinach to equal two pounds cooked and frozen is almost as good. It is also more economical, so it is the perfect convenience food. All it needs are some good seasonings for a quick, easy, healthy and delicious side dish.


Place spinach in a large microwave-safe bowl with lid. Add about 2 tablespoons water. Cover and cook on high for 6 to 8 minutes, depending on microwave wattage. Stir occasionally several times while cooking. When hot, drain well.

Place the garlic and olive oil in a small microwave-safe bowl. Cover with a paper towel and cook on high for about 40 seconds or until the garlic is softened, stirring occasionally and making certain the garlic does not brown. Pour the garlic and oil over the drained spinach. Add salt and pepper to taste. Stir well to combine. Return to microwave and heat for another minute. Serve immediately or cover to keep hot, returning to the microwave for another minute to reheat if necessary.
