SPINACH WITH OLIVE OIL AND GARLIC

SERVES 4-6

This recipe is based on the Vegetables Steamed with Olive Oil and Garlic. You will need to use that recipe to make the fresh spinach, which I usually do. But when I don't have fresh on hand, I use frozen.

INGREDIENTS

Place frozen spinach in large microwave-safe bowl with lid. Add about 2 tablespoons water. Cover and cook at High heat for 9 to 12 minutes. Stir occasionally and rotate the bowl. When done, drain well.

Place the garlic and olive oil in a small microwave-safe bowl. Cover with a paper towel and cook on High for about 40 seconds or until the garlic is softened, stirring occasionally and making certain the garlic does not brown. Pour the garlic and oil over the drained spinach. Add salt and pepper to taste. Stir well to combine. Return to microwave and heat another 2 minutes.
