- 2 pounds zucchini, cut into 1/4-inch slices
- 1 teaspoon dried thyme leaves
- Salt and pepper to taste
- 1 tablespoon melted butter, preferably unsalted
- 2 tablespoons freshly grated Parmesan cheese
Preheat oven to 450° F. Place zucchini slices in large, shallow pan in one layer or slightly overlapping as needed. Sprinkle with the thyme, salt and pepper. Drizzle with the butter. Roast until tender and lightly browned, about 40 minutes. Sprinkle with the cheese and return to oven for another minute. Serve hot or warm.
Notes: The zucchini can be roasted at a slightly lower temperature if the oven is being used for another dish, adjusting the cooking time as needed.
