This is a personal family collection of vegetable recipes, some of which have been passed down through several generations of my Pennsylvania Dutch family, others that I learned from Italian friends, and the remainder of my own creation. My mother never had to tell me to "eat your vegetables". I always liked them. I like them so much, I usually grow my own in the summer. They are healthy, delicious, nutritious and so versatile, whether used in side or main dish recipes, both of which are featured here.
To clarify the index categories, cauliflower is included in 'Green Vegetables'. 'Beans and Peas', which are actually legumes, include both fresh and dried varieties. Additionally, I added a section for corn, which is a grain, and mushrooms, which are fungi. Most of the 'Main Dish' recipes can be used as side dishes, and vice versa. For additional main dish recipes in which vegetables are a major ingredient, visit the Pasta and Soup pages. For additional vegetable side dishes, browse the Salads page. Eat your vegetables and enjoy!
