Mom never had to tell me to "eat your vegetables". I always liked them. I like them so much, I usually grow my own in the summer. They are healthy, delicious, nutritious and so versatile, whether used in side or main dish recipes, both of which are featured here.
To explain the index categories, sweet potatoes are listed under 'Other Root Vegetables', not potatoes. Cauliflower is included in 'Green Vegetables'. 'Beans and Peas' include both fresh and dried which, of course, are actually legumes. Additionally, I added a section for mushrooms.
