This is a collection of vegetable recipes, some of which have been passed down through several generations of my Pennsylvania Dutch family, others that I learned from Italian friends, and the remainder of my own creation. My mother never had to tell me to "eat your vegetables". I always liked them. I like them so much, I usually grow my own in the summer. They are healthy, delicious, nutritious and so versatile, whether used in side or main dish recipes, both of which are featured here.
To explain the index categories, sweet potatoes are listed under 'Other Root Vegetables', not potatoes. Cauliflower is included in 'Green Vegetables'. 'Beans and Peas', which are actually legumes, include both fresh and dried. Additionally, I added a section for corn, which is a grain, and mushrooms, which are fungi. Most of the 'Main Dish' recipes may be used as side dishes, and vice versa. For additional main dish recipes in which vegetables are a major ingredient, check the Pasta page.
