CAPER BASTE FOR GRILLED FISH

INGREDIENTS

Heat grill. Combine butter, lemon juice, capers and set aside. Rub fish with oil; season with salt and pepper. Grill fish until done, 3 to 5 minutes on each side. Serve with butter/caper mixture.

Notes: The grilled fish can be basted with the mixture. It can also be used as a dip for fried fish. (See Grilled Fish Filets with Caper Marinade for information on capers.)
