GRILLED FISH FILETS WITH CAPER MARINADE

INGREDIENTS

In a large bowl or shallow dish, combine the garlic, capers, lemon juice, olive oil and pepper. Place fish filets in the container, making sure marinade covers all sides. Cover and refrigerate for about 1 hour.

Place on hot grill and cook until fish is done, approximately 10 minutes, depending on thickness of filets.

Variation: Baste fish slightly with tomato paste when finished.

Notes: For those not familiar with capers, they are quite salty because they are cured in a brine. That is why they are rinsed before using and no additional salt is needed. According to Alex, the smaller varieties have more flavor. He also suggests that chopping the capers in a food processor might add flavor.
