Grilled Fish Fillets with Caper Marinade
(Shared recipe submitted by Alex.)
Ingredients
- Fish fillets (any lean white fish will do)
- 3 large garlic cloves, minced
- 3 tablespoon capers, rinsed, drained and chopped
- 6 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- Freshly ground black pepper to taste
In a large bowl or shallow dish, combine the garlic, capers, lemon juice, olive oil and pepper. Place fish fillets in the container, making sure marinade covers all sides. Cover and refrigerate for about 1 hour.
Place on hot grill and cook until fish is done, approximately 10 minutes, depending on thickness of fillets.

Variation: Baste fish lightly with tomato paste when finished.
Notes: For those not familiar with capers, they are quite salty because they are cured in a brine. That is why they are rinsed before using and no additional salt is needed. According to Alex, the smaller varieties have more flavor. He also suggests that chopping the capers in a food processor adds more flavor.
