Kissel Pimento Cheese

Ingredients
- 1 pound extra sharp cheddar cheese, preferably New York State
- 4 ounces roasted pimentos or peppers
- Mayonnaise
Grind or shred cheese and pimentos and all the liquid. Mix and add enough mayonnaise to make smooth. (A small amount makes it a cracker spread. More makes it easier to spread on soft breads.) To make a cheese ball, just refrigerate and roll into a ball and roll in chopped walnuts. Your guests will go nuts over it. I usually make two batches as it is a mess in the processor and might as well make a lot. It keeps well in the refrigerator and makes the best grilled cheese sandwiches.
