Chris writes: "My father asked me to pass along two of his favorite recipes. In this recipe, you may add more or less cinnamon, raisins, walnuts, and/or sugar to suit your taste."
INGREDIENTS
In a large bowl, stir together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins. In another bowl, beat eggs and oil. Pour over flour mixture and stir until moistened. Turn into a greased 9x5x3-inch loaf pan. Bake in preheated 350° F oven for 1-1/2 hours or until pick inserted in center comes out clean. Cool in pan 10 minutes; invert on rack, turn topside up and cool completely.
