- 4 to 5 boneless, skinless chicken breasts
- 1 jar herb pesto (Deb prefers Classico brand)
- 8 ounces shredded mozzarella cheese
Preheat oven to 350° F. In a large glass baking dish, place chicken breasts that have been hammered with a meat tenderizer. Spread or smear pesto sauce over each piece of chicken. Top with grated mozzarella. Sprinkle with freshly ground black pepper. Bake for 35 to 40 minutes. Ummm!
