Easy Pasta Fazool (Italian Pasta and Bean Soup)
(Shared recipe submitted by Erly Albanese)
Erly writes: "My late mother-in-law, Vincenza Albanese, was from Sicily. You said your recipe for 'Pasta Fazool' was time consuming? (That version is in the similar and related recipes.) Hers is the exact opposite! The first time my husband (of 41 years now) made this for us, I said, "MY kids will NEVER eat that!" Leave it to kids to make a liar out of you. It's still a cold weather favorite for all of us."
- 1 pound baby lima beans (or other bean, if preferred)
- 1 large onion, chopped
- 2 cloves garlic, chopped (or 1/2 teaspoon garlic powder)
- One can (4-ounces) tomato paste
- Ditalini pasta (also known as 'Salad Pasta')
Cook lima beans until half done. Add onion and tomato paste and continue cooking until beans are done. Boil pasta on the side; drain and add to soup as desired.
