SERVES 4 to 6
INGREDIENTS
Bring 3 quarts of water to a boil. Add enough salt but not too much to the water just to flavor it. Add the pasta and cook as directed on the package, until al dente.
Cook sliced garlic in a tablespoon or two or olive oil until getting lightly browned. Then add kale, broccoli rabe or spinach to same pan and add a bit of chicken stock to make the vegetable tender.....cover pan. Check on this.
While vegetable is cooking, sauté Italian sausage until brown.
When pasta is done, drain and return to pan. Toss together with the greens, garlic, sausage and (or not) Parmesan cheese.
Notes: You may add onion if you wish when you are browning sausage. Also use the chicken broth or some of the pasta water to make the pasta recipe the right consistency. Just add a bit by bit in the entire pan (when all together) until you get what you want. Also you can put the cheese on at the table if you wish........some do not want cheese. Oh, and red pepper flakes in with the vegetable make it interesting!!!
