Flexibility Soup (Soup from Leftovers)
(Shared recipe submitted by Joan Hansen.)
Joan writes: "This is based on a recipe I tore out from one of those magazine-type cookbooks you find in checkout lanes. It's kind of the ultimate 'leftovers' recipe."
Ingredients
- 4 cups water
- 2 tablespoons granulated beef bouillon
- 1/2 teaspoon thyme
- 1/4 teaspoon leaf basil
- 1 clove garlic, minced
- 3 to 4 cups assorted bite-size fresh or canned vegetables, leftover cooked plain vegetables, meat, and rice or macaroni (whatever you have on hand)
- Salt and pepper to taste
In medium saucepan, combine all ingredients; bring to a boil. Simmer, uncovered, 20 to 30 minutes, until fresh vegetables are tender.
