Lobster Bisque

Ingredients
- 1 medium onion, finely chopped
- 1/2 cup butter
- 3/4 cup all-purpose flour
- 2 cups chicken broth
- 1 can (11.5-ounces) lobster meat (can use one box (14-ounces) langostinos which is less expensive and just as good)
- 3/4 cup dry sherry
- 3 cups light cream
- 2 tablespoons tomato paste
- Salt and pepper to taste
Sauté onions in butter until translucent. Stir in flour until mixture is smooth. Add chicken broth until thickened. Add lobster or langostinos and cook for 20 minutes. Blend in sherry, cream, tomato paste, salt and pepper and cook 5 minutes longer.
