Ingredients
- 1 can (29-ounces) sliced peaches
- 1/3 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup sour cream
- 1 large egg
- 1 package (3-ounces) cream cheese, softened
- 1 cup all-purpose flour
- 2/3 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter or margarine, softened
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1/4 cup firmly packed brown sugar
Preheat oven to 350° F. Drain peaches, reserving 1 tablespoon syrup; set aside.
For the filling, in a small bowl, combine all ingredients. Beat with an electric mixer at medium speed 3 minutes, or until smooth and creamy.
For the crust, blend together the reserved peach syrup, flour, sugar, baking powder, salt, butter, vanilla and eggs in a large bowl. Beat at medium speed, scraping bowl occasionally, for 3 minutes. Spread evenly on bottom and sides of greased 10-inch pie pan. Pour in filling and bake for 25 minutes, or until crust is light golden brown. Meanwhile, make the sour cream topping.

For the topping, mix the sour cream and brown sugar until well combined. When the crust is done, top with the drained peaches and spoon the topping over the peaches. Bake 5 minutes longer. Cool and chill.
About Melani: It is interesting to note that Melani was taught to cook by her husband's Pennsylvania Dutch grandmother on an old cookstove that she still uses today.
