CHOCOLATE DIPPED PEANUT BUTTER BALLS

INGREDIENTS

Peanut Butter Filling:

  • 1 cup peanut butter (smooth)
  • 1 cup confectioner's (powdered) sugar
  • 2 large egg yolks (see Teri's note below)
  • 1 teaspoon vanilla
Chocolate Coating:
  • 12 ounces chocolate chips
  • 1/8-pound (2-ounces) paraffin

For the filling: Combine and mix peanut butter, confectioner's sugar, egg yolks and vanilla. Roll into 1-inch balls and place on cookie sheet; chill in refrigerator until cold.

For the candy coating: Melt the chocolate chips and paraffin in a double boiler over hot water. Dip peanut butter balls into chocolate mixture and place on waxed paper to set.

Teri's Note: If you are concerned about consuming raw egg yolks, you can use pasteurized eggs or egg product.
