Stuffed Fish Fillets

Robyn writes: "If you like seafood I have the perfect dish. It's something I did one day for my husband. It's stuffed fish. If you get in the stores you will pay out the ear for just two. Well, I made my own version."
Ingredients
- 8 ounces frozen salad shrimp
- 8 ounces fresh bay scallops
- 8 ounces imitation or fresh crab meat
- 1 egg
- 1 small onion diced
- 2 cloves of garlic diced
- 1 cup Italian bread crumbs
- 3/4 cup melted butter, divided
- 1 tablespoon lemon juice
- 1 pound ocean catfish fillets (fresh or frozen, thawed)
Preheat oven to 350° F. Combine all ingredients except the fish, using 1/2 cup of the melted butter, until moist. Place fish in the palm of your hand and place 2 to 3 tablespoons of stuffing on each fillet. Wrap fish ends together until they meet. Place in a shallow baking dish, seam side down. Repeat with remaining fish. Bake for 10 minutes and brush with the remaining 1/4 cup melted butter. Bake an additional 20 minutes or until fish and scallops are done. Brush with pan juices 5 minutes before taking out of oven. I serve with parmesan cheese Brussels sprouts, garlic pasta, and a side garden salad. I hope you enjoy this recipe.
