OKINAWAN SHOYU PORK

INGREDIENTS

Soak meat in Sake in sealable plastic bag for at least one hour or overnight. Drain.

Boil pork in water and ginger for 2 hours (or 25-30 minutes in a pressure cooker). Drain and cool meat. Slice; put in baking pan.

Bring the shoyu, sugar and mirin to a boil in a small saucepan. Sprinkle green onions over the pork, then pour in the sauce. Bake in a preheated 350° oven for 45 minutes
