POTATO SALAD

Terrie writes: "The best potato salad I ever had was made by an elderly friend of mine 10 years ago. She gave me the recipe and I'll try my best to give correct measurements."

INGREDIENTS

2 pounds potatoes, boiled with skins on for 30-45 minutes, peeled and diced into 1/2-inch chunks

1 medium onion, diced

1/2 cup chopped celery

1/2 pound sliced bacon, fried and crumbled, fat reserved for dressing

3 hard-boiled eggs

2 cups Hellmans real mayonnaise (or any mayonnaise you prefer)

1/2 teaspoon prepared salad mustard

1/2 cup milk

1 teaspoon sugar

Salt and pepper to taste

Mix together the mayonnaise, mustard, sugar, milk, bacon grease, egg yolks, and salt and pepper. Combine onions, potatoes, celery, crumbled bacon in large bowl. Mix in dressing...enjoy!!!!
