Madge's Orange Cake

Serves 10 to 12

This is one of several cakes that my mother got from her friend, Madge. Madge made quite a few different types of unfrosted cakes, including the pound cake in the similar and related recipes. This orange cake recipe is a quick and easy dessert for family or a potluck event.

Ingredients

  • 1-1/2 cups granulated sugar
  • 1/2 cup shortening, preferably non-hydrogenated
  • 3 large eggs, room temperature
  • Rind of 1 orange, grated
  • 1/2 cup orange juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1/2 cup milk, room temperature

Preheat oven to 350° F. Grease and flour the bottom of a tube pan. Cream together the sugar and shortening. Add the eggs and beat well. Add the grated orange rind and orange juice. Whisk together the flour, salt and baking powder. Add to batter, alternating with the milk, beating well after each addition. Pour into prepared pan. Bake for 25-35 minutes or until cake springs back to the touch. Remove from oven and cool on rack for 10 minutes. Remove cake from pan and cool completely before serving.
