This is a personal family collection of vegetable recipes, some of which have been passed down through several generations of my Pennsylvania Dutch family, others that I learned from Italian friends, and the remainder my versions of classics or of my own creation. My mother never had to tell me to "eat your vegetables". I always liked them. I like them so much, I usually grow my own in the summer. They are healthy, delicious, nutritious and so versatile, whether used in side or main dish recipes, both of which are featured here.
To clarify the index categories, there are several types of produce that are not vegetables but are often classified as vegetables. For that reason, I included them on this page. Beans and peas are actually legumes, corn is a grain and mushrooms are fungi. Most of the 'Main Dish' recipes can be used as side dishes and vice versa. For additional main dish recipes in which vegetables are a major ingredient, browse the Pasta Recipes and Soup and Chowder Recipes.
