Creamed Peas and Onions

Serves 4

This recipe for peas and onions is quick, super easy and very good. For a different presentation for a special occasion, you can use frozen pearl onions, cooking them just long enough to defrost before adding the peas.

Ingredients

  • 1 pound frozen green peas
  • 1/2 cup coarsely chopped onions
  • Water for cooking
  • 1/2 cup whipping or heavy cream
  • 3 tablespoons butter, preferably unsalted
  • Salt and pepper to taste

Place peas and onions in either a microwavable dish or a saucepan. Add water according to package directions for the method you are using. Cook until just tender. Drain very well. Add the cream, butter, salt and pepper. Cook just until hot. Serve immediately.

Notes: Frozen peas do not require much cooking. As a matter of fact, they are best when they just get hot, so you might not want to cook them as long as stated in the directions on the package. The onions can be cooked in water until tender, then add the peas and cook until hot.
