This is a collection of salad and salad dressing recipes, some of which have been passed down through several generations of my Pennsylvania Dutch family, the remainder my versions of classics and of my own creation. There are so many different types of salads. I usually serve a tossed green salad with a simple olive oil and vinegar dressing with dinner. Occasionally, I make a large main dish salad. Then there are the numerous types of vegetable and pasta salads, as well as those in which meat, seafood or poultry are the main ingredient. Most salads are very healthy. It is the dressing and toppings that can add unwanted fat, sugar, salt and calories, so be judicious in the type and amount used if that is a concern. It is so easy to make your own dressings. They are much tastier than bottled and you control the ingredients. I have included some of my favorites in the recipes below. Make more salads, have fun, use your imagination and enjoy!
