Homemade French Dressing

Makes about 3/4 cups

Authentic French dressing is a simple oil and vinegar combination with various herbs added. It looks nothing like the American bottled dressing that is reddish-orange in color. This recipe, which came from my mother, mimics the flavor of bottled dressing without the coloring additives. It is so quick and easy you might never go back to the store-bought variety.

Ingredients

  • 1 tablespoon fresh lemon juice
  • 1 to 2 tablespoons white wine vinegar (can use red wine vinegar)
  • 1/4 teaspoon dry mustard
  • Salt and pepper to taste
  • 6 to 8 tablespoons olive oil

Mix together first 3 ingredients. Add salt and pepper. Gradually add olive oil, whisking until thickened. Taste for seasoning. Use immediately or refrigerate for up to 5 days, whisking or shaking to recombine.

Note: Use the amount of vinegar and oil to suit your taste. More vinegar will make a tangier dressing.
