Grain Recipes

This is a collection of recipes for grains, some of which were passed down from my family, others that came from friends, and the remainder my versions of classics and of my own creation. It includes rice, wild rice, cornmeal, polenta and grits, kasha, bulgur, oats, barley and more in side dish presentations, as well as main dishes in which the grain is a major component. I love grains and try to eat them often. Most of them are healthy and nutritious, especially the whole grains. They are also economical and very versatile in preparation. The most familiar is long-grain white rice, but try to expand your choices. Brown rice has more nutrition and flavor. Short-grain rice makes great risotto, paella or creamy desserts. Wild rice, which is actually a grass, has a wonderful nutty flavor. Polenta, which is cornmeal, is highly flavorful. Barley, kasha, bulgur and quinoa are just a few examples of grains that offer valuable nutrients to the diet, not to mention a variety of taste sensations. You do not have to be a 'health nut' to love grains, and more varieties are becoming available in the average supermarket. I have many more to try, but you can make a few from my current list. Use your own ideas, experiment and have fun!

It should be noted that whole grains have a shorter shelf life than processed grains, such as white rice, because none of the nutrients have been removed. Check the boxes or bags for "best by" or "use by" dates. Most can be stored in the refrigerator or freezer to extend their freshness by months.
