This is a collection of seafood and fish recipes, a few that came from my mother and the remainder my versions of classics and of my own creation. I have included fish and shellfish as an entrée, as well as in sandwiches, pasta and soups in which they are the main ingredient. Additionally, you will find sauces, condiments and broth that complement many of the dishes. Seafood is one of my favorite foods. There are so many different varieties from which to choose, whether you prefer fish or shellfish. When purchasing any seafood, it should always have a fresh, not 'fishy', smell. For most preparations, seafood should not be overcooked or it will become dry and tough. Some fish, like salmon and tuna, are best when cooked rare to medium, my preference being medium-rare. They tell us to eat more fish, so browse the recipes below, try a few and enjoy!
I believe it is important to mention that many species of fish and seafood are endangered due to overfishing, as well as by some of the methods used for farm-raising and harvesting. Where a specific type of fish is called for in a recipe, it is a good idea to check on its current status because it might have changed since the recipe was posted. There are several sites online that contain lists of endangered seafood or fish species. You can do a search to find those which have the most current information.
