This Italian-influenced shrimp recipe is quick, easy, healthy, delicious and equally appropriate for a family dinner, special occasion or entertaining. Heat a medium skillet over medium-high heat. Add the olive oil, then the onions and green peppers. Sauté until vegetables are softened, about 5 minutes. Add the garlic and sauté one more minute. Add the broth, tomatoes, basil, parsley, salt and pepper. Cook, uncovered, until reduced by half, about 10 minutes. Add the shrimp; cover and cook until shrimp turn pink, about 4 minutes. Serve immediately, scooping extra sauce over the side dish.
