This is a collection of recipes for homemade pizza and pizza dough, most of which were passed down from friends and the remainder my versions of classics or of my own creation. When I was a teenager, I was introduced to homemade pizza by Italian friends. It was amazing. They always made Sicilian-style pizza with a thick crust that was crisp on the bottom and tender inside. Most often, they topped it with tomatoes and a combination of Italian cheeses. Occasionally, they topped the pizza with cooked greens, such as broccoli rabe. Ever since then, I much prefer homemade pizza to store-bought or delivery. As a matter of fact, I have not had either for longer than I can remember. Homemade pizza is so much tastier and healthier, and making the dough is quite simple. However, you can purchase dough or prebaked crusts and keep them on hand for a quick dinner prepared with very little effort. I admit that, these days, I usually make pizza using store-bought pita bread. I open a can of unseasoned crushed tomatoes to which I add minced fresh garlic and dried herbs. I top the pizza with mozzarella, Parmesan and Romano cheeses, then a drizzle of olive oil. Quick, easy and absolutely delicious!
