This is a collection of recipes for lamb and veal, a few of which came from my family, others from friends, and the remainder my versions of classics and of my own creation. Lamb is probably my favorite meat, with veal running a close second. Unfortunately, both are relatively expensive, especially veal. I keep an eye out for sales and, if I do not want to use it that day, freeze it for later use. Depending on the cut, both meats are great grilled, roasted, braised or sautéed.
