It is not very often that I can find leg of lamb steaks, but they are a delicious, lean and very tender cut so I get some when they are available. You can substitute loin chops, as in the similar and related recipes. If you do not have an outdoor grill, the steaks are equally good made in a grill pan or under the broiler. Make this recipe in any amount needed.
Place the steaks in a shallow dish in one layer. Season with the garlic, rosemary, oil, salt and pepper. Turn the steaks to coat both sides. Let set about 30 minutes. Meanwhile, heat a grill over high heat. Add the steaks and cook until the desired doneness, about 4 minutes per side for medium-rare, depending on thickness. Serve immediately.
