This oven-fried fish fillet recipe is a quick, easy and delicious alternative to frying. The seasonings in the breadcrumb crust add a lot of flavor. Use any firm, white-fleshed fish that is fresh and available that day or stored in your freezer
Preheat the oven to 425° F. Line a shallow-sided baking sheet or pan with foil for easy cleanup. Place in the oven to preheat for 5 minutes.
Meanwhile, combine the breadcrumbs, garlic, parsley, cheese, paprika, salt and pepper on a large plate. Rub each fillet with lemon juice, then dredge in the crumb mixture to lightly coat.
Grease the hot pan lightly with cooking oil spray. Place the fish on the pan and spray the tops with cooking oil spray. Bake until cooked through, 10 to 12 minutes, depending on thickness. Serve immediately, with a lemon wedge on each plate.
