This is a quick, easy and delicious seafood main dish that is equally appropriate for a family meal or entertaining. I especially like it with flounder, but any firm, white-fleshed fish can be used. The recipe can be made in any amount needed.
Preheat oven to 400° F. Lightly butter or spray a baking dish large enough to hold the fish in one layer. Pat the fish dry on both sides with paper towels and place in the dish, skinned-side down. Season with salt and pepper.
Melt 2 tablespoons of butter in a small skillet over medium-high heat. Add the breadcrumbs and sauté until lightly browned, stirring often, about 5 minutes. Add the garlic and sauté another minute. Remove from heat and stir in the parsley and dill. Top the fish with the breadcrumbs, pressing down lightly to help them adhere. Melt the remaining 2 tablespoons of butter and drizzle over the fish. Bake until the fish is done, about 8 minutes depending on the thickness. Serve immediately with the lemon wedges on the side.
