Broiled Scallops with Garlic Breadcrumbs

Serves 4

This recipe for broiled scallops is a quick and easy main dish. The seasonings in the breadcrumbs add just the right amount of delicious flavor without overpowering the scallops. Serve it for a family dinner, special occasion or entertaining. The recipe can be made in any amount. When purchasing scallops, you probably want an equal amount of scallops per person even if you go over the weight indicated in the recipe.

Ingredients

  • 1-1/4 pounds medium to large sea scallops
  • 3 tablespoons melted butter, preferably unsalted, divided
  • Salt and pepper to taste
  • 3/4 cup coarse fresh breadcrumbs
  • 1/2 teaspoon minced fresh garlic
  • 1 tablespoon chopped fresh parsley

Preheat broiler to high. Pat scallops dry and place in shallow sheet pan or broiler-proof baking dish. Drizzle with 1 tablespoon of the butter. Season with salt and pepper. Place the breadcrumbs, garlic and parsley in a small bowl. Add the remaining butter and stir until well combined. Sprinkle the breadcrumb mixture over the tops of the scallops. Broil until the topping is nicely browned and bubbly, and the scallops are just cooked through. Serve immediately.
