Baked Salmon with Orange Honey-Mustard Glaze

Serves 2

This is an easy, healthy and delicious recipe for salmon fillets. It makes a quick main dish for a busy weeknight, but is equally appropriate for a special occasion or entertaining. The recipe can be made in any amount needed.

Ingredients

  • 1 tablespoon butter, preferably unsalted, melted
  • 2 tablespoons orange juice
  • 1-1/2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried tarragon
  • Salt and pepper to taste
  • Cooking oil spray
  • 4 center cut skinless salmon fillets, about 6 ounces each

Preheat oven to 450° F. Mix the first 6 ingredients together in a small bowl. (If the butter congeals because the orange juice is cold, microwave for a few seconds until melted.)

Spray a sheet pan or shallow baking dish with cooking oil spray. Add the salmon fillets, skinned-side down. Brush the tops with the glaze, and bake until cooked through, about 8 minutes depending on thickness and desired doneness. If desired, place under a hot broiler for one minute for additional browning.
