Pan-Seared Salmon with Balsamic Marinade

Serves 4

This salmon recipe is a quick, easy, healthy and delicious main dish. The balsamic marinade adds both tartness and a touch of sweet. The recipe can be made in any amount needed.

Ingredients

  • 1 tablespoon minced garlic
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 4 salmon fillets, 4 to 6 ounces each
  • 2 tablespoons balsamic vinegar
  • 2 tablespoon olive oil, divided
  • Salt and pepper to taste

In a small bowl, mix together the garlic, parsley and dill. Press the mixture on the skinless side of each fillet. Place in a shallow dish then drizzle with the vinegar and 1 tablespoon oil. Let set for 30 minutes, no longer.

Heat a large skillet over medium-high heat. Add the 2 tablespoons oil. Remove the salmon from the dish and pat dry with a paper towel. Season with salt and pepper to taste. Reserve the marinade. Sear the salmon, skinless side first, for 3 minutes. Turn and sear the skin side another 3 minutes or until desired doneness. Remove from pan and tent lightly with foil.

Pour the reserved marinade into the pan, adding a little water if needed, and bring to a boil for about 2 minutes, scraping up any browned bits in the bottom of the pan as it reduces. Serve the salmon with a little of the balsamic reduction drizzled over each fillet.
