Easy Grilled Shrimp

Serves 4

This is a quick, easy, light and delicious recipe for grilled shrimp. Admittedly, it is the lazy way to grill. No skewers or turning each shrimp individually, the sauce is right in the pan, and the pan can be tossed away after cooking for easy cleanup. The shrimp still picks up some of the smoky flavor from the grill. The dish can be cooked on the stovetop using a skillet over medium-high heat and made in any amount needed.

Ingredients

  • 1-1/2 pounds medium or large shrimp, peeled and deveined
  • 2 tablespoons butter, preferably unsalted
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 4 lemon wedges

Place everything except the parsley in a foil baking dish. Place on a preheated grill over high heat. Sauté, stirring occasionally, until shrimp turn pink, about 5 minutes depending on size. Garnish with the parsley and serve with the lemon wedges.
