This is a very basic and easy recipe for grilled fish, but so delicious and healthy. I suggest you purchase salmon with the skin on because it gives the flesh extra protection from the hot grill. If you prefer, it can be removed before serving. My favorite herb with salmon is dill, but parsley and tarragon are equally good.
Place fillets on a plate, skin side down. Pat the minced garlic into top. Drizzle with lemon juice from 1/2 of the lemon and olive oil, then season with salt and pepper. Heat a grill pan over high heat. Rub the pan well with oil. Place fillets in pan, skin-side down. Grill on both sides until done, about 3 minutes per side depending on thickness and desired doneness. Garnish with dill, parsley or tarragon. Cut the remaining lemon into four wedges and add to individual plates with the salmon. Serve immediately.
Notes: The salmon can be grilled on an outdoor grill, broiled or sautéed in a skillet and the recipe made in any amount needed.
