Anchovy Butter Sauce

Makes about 1/2 cup

I have to thank a friend for this one. I could not decide what to make for dinner and she suggested grilled fish. Then I came up with the idea for the sauce. I knew she would love it because she adores my Linguine with Anchovy Sauce, which is in the similar and related recipes. Anchovy sauce is good with fish or vegetables. It is delicious brushed on bread and broiled or baked like garlic toast, or served as a dip with bruschetta. The recipe can be made in any amount needed.

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 1 tablespoon minced fresh garlic
  • 2 ounces anchovy fillets, drained, rinsed and patted dry
  • Juice of 1/2 lemon
  • 4 tablespoons chopped fresh parsley
  • Pepper to taste

Heat the oil and butter in a small saucepan over medium heat. Add the garlic and sauté for 1 minute. Add the anchovies and cook until melted. Reduce the heat if they start to brown. Stir in the lemon juice, parsley and pepper to taste. Keep warm or gently reheat when ready to use.

Notes: This is a butter sauce. However, it can be made with all olive oil and will still be excellent.
