Homemade Russian Dressing

Make in any amount (see notes below)

Russian dressing is actually an American creation. I read that it probably got its name from the fact that early versions included caviar. Since it is a mayonnaise-based dressing, it is best used on hearty-textured greens, such as iceberg or romaine. This recipe, which is very quick and easy, came from my mother.

Ingredients

  • Mayonnaise (can use light or reduced fat)
  • Chili sauce
  • Finely chopped onions
  • Finely chopped green peppers
  • Finely chopped pimentos or red bell peppers
  • Finely chopped celery
  • Fresh lemon juice
  • Salt to taste

Thoroughly mix together all ingredients. Taste for seasoning. Use immediately or refrigerate for up to 3 days.

Notes: Start with the amount of mayonnaise you want, then add the other ingredients to taste. Go easy on the salt, as the mayonnaise and chili sauce have plenty. If desired, substitute sour cream, regular or reduced fat, for some of the mayonnaise to mellow out the flavor and loosen the texture.
