Tomato and Cucumber Salad

Serves 4

This quick and easy salad recipe is a delicious way to use tomatoes and cucumbers when they are at the peak of flavor from your garden or local farmers' market. Make the recipe in any amount needed.

Ingredients

  • 2 large tomatoes, sliced
  • 1 large cucumber, sliced
  • Fresh basil leaves, shredded
  • Salt and pepper to taste
  • Red wine or Balsamic vinegar
  • Olive oil

Place the tomatoes and cucumbers on a platter in alternating and overlapping layers. Sprinkle with basil, salt and pepper. Drizzle with a little vinegar and oil. (Can be prepared up to 30 minutes before serving and kept at room temperature.)

Notes: When the tomatoes and cucumbers are in season and very tasty, you do not need much vinegar or oil. Use more only if the vegetables need a little flavor boost.
