Easy Oil and Vinegar Dressing

Make in any amount

This is the salad dressing I use most often, as in my Everyday Tossed Green Salad in the similar and related recipes. It is light, easy, very tasty and requires no preparation since everything is added directly to the greens before tossing. This is also the base for many vegetable salads. The amount of ingredients depends on the amount of greens and can be altered to suit individual tastes.

Ingredients

  • Balsamic or red wine vinegar (can use other vinegar or fresh lemon juice)
  • Freshly grated Parmesan cheese or other cheese of choice
  • Minced fresh garlic
  • Fresh or dried basil and/or tarragon
  • Salt and pepper to taste
  • Olive oil

Prepare the greens and whatever vegetables you are using, such as tomatoes, cucumbers, peppers or onions. Place in a large salad bowl. Add vinegar, parmesan cheese, garlic, basil, salt and pepper. Drizzle with desired amount of olive oil. Toss just before serving and taste for seasoning.

Variation: For a creamy salad dressing, add a small dollop of mayonnaise, sour cream or yogurt. Toss well to incorporate.
