Braised Broccoli with Garlic and Parmesan Cheese

Serves 4

This is a quick, easy, healthy and delicious recipe for broccoli. The Italian braising method, which can be used for many types of fresh vegetables, uses just enough liquid to help the cooking process and prevent scorching. Serve this side dish for a family meal or, since it travels well and can be served at room temperature, a potluck event.

Ingredients

  • 1 bunch broccoli, about 1-1/2 pounds
  • 2 tablespoons olive oil
  • 2 large garlic cloves, minced
  • Salt and pepper to taste
  • Water
  • 3 tablespoons freshly grated Parmesan cheese

Clean the broccoli. Remove the tough stem ends, then cut the remainder into medium florets and small stem pieces.

Heat the oil in a large skillet over medium-high heat. Add the garlic and sauté until softened, about 1 minute, being careful not to brown. Add the broccoli, salt, pepper and just enough water to make some moisture in the pan. Cover and cook until tender, about 15 minutes, adding more water if it dries out. When done, remove the lid and cook until the water evaporates. Sprinkle the top with the Parmesan cheese. Let set until the cheese has melted. Serve hot, warm or room temperature.
