The first time I tried shelled edamame, which are young soybeans, I was hooked. They are somewhat sweet and very flavorful, similar to lima beans, but crunchier and less starchy. Using frozen, shelled edamame, called mukimame when the shells are removed. makes this recipe super easy and quick. The beans can be cooked on the stovetop or in the microwave. I prefer the microwave when I cook most frozen vegetables and some beans, but the stovetop for this recipe. If cooking on the stovetop, follow the instructions below using the package directions for that method. Buttered shelled edamame is a delicious side dish that complements many meals. Place the edamame and onions in a microwavable dish. Add water and cook according to package directions (see notes below). Drain well. Stir in butter, salt and pepper. Return to microwave for about 30 seconds. Serve immediately, or cover and keep warm until needed.
Notes: Whether cooking on the stovetop or in the microwave, I never use as much water as the package calls for, nor do I cook the beans as long as suggested because I do not want them too soft. You can start with less water and time, check while cooking and add more if needed.
