Baked Parsnips

Serves 4

This is my version of a traditional Irish recipe for baked parsnips. It is a quick, easy and delicious side dish. Serve parsnips for a weeknight meal, St. Patrick's Day or any occasion. Use bacon grease for a mild, smoky flavor or butter for a vegetarian version. The recipe can be made in any amount needed.

Ingredients

  • 2-1/2 pounds parsnips
  • Water for cooking, plus 3 tablespoons
  • Salt and pepper to taste
  • Pinch of nutmeg
  • 2 tablespoons bacon grease or butter, melted

Preheat oven to 350° F. Peel the parsnips. Cut into quarters and remove any woody core. Cook in lightly salted water for about 15 minutes or until just tender. Drain; place in an ovenproof baking dish. Add the 3 tablespoons water; sprinkle with salt, pepper and nutmeg. Drizzle with the bacon grease or butter. Bake for 30 minutes or until tender. Serve immediately.

Notes: A higher or lower oven temperature can be used if baking or roasting another dish. Adjust the baking time accordingly.
