Sautéed Zucchini

Serves 4

This is a vegetable side dish that can be served with a family dinner as well as for elegant entertaining. The recipe is quick, easy and delicious. You can use almost any herb, fresh or dried, that complements the main dish. Yellow squash can be substituted for the zucchini.

Ingredients

  • 1 pound small zucchini, cut into 1/4-inch slices
  • Salt and pepper to taste
  • Herb of choice, such as marjoram, oregano or thyme
  • 1 tablespoon butter, preferably unsalted
  • 1 tablespoon olive oil, more if needed
  • Freshly grated Parmesan cheese

Sprinkle the sliced zucchini with salt, pepper and herbs. Heat the butter and olive oil in a large skillet over medium-high heat, adding more oil if needed to cover bottom. Add the zucchini and sauté until slightly tender and golden brown on each side, about 5 minutes per side. Turn off heat; sprinkle with a little Parmesan cheese and let it set just until the cheese has melted. Serve immediately or keep warm over very low heat.
